Quality is ensured from the very beginning. Our master butchers shape each shoulder by hand, a delicate process that guarantees the ideal cut. The salting is done using a traditional, centuries-old method, avoiding modern mechanical processes to give each piece the perfect amount of salt.
The curing takes place with natural air in Cortegana’s drying rooms, where time and open windows do all the work. The master ham-maker monitors each piece, determining the exact moment they should go into underground cellars, where the curing exceeds 18 months.
