This Bellota Pata Negra Shoulder represents the highest expression of Ibérico quality. It comes from 100% Ibérico pigs with carefully selected characteristics, raised in oak and cork-oak dehesas in the Sierra de Huelva.
Bellota is their main food during the Montanera season. To ensure supreme quality, the pigs are inspected by independent audits verifying that the intake of acorns is sufficient to achieve the stipulated standards and official certification.
Quality is ensured from the very beginning. Our master butchers shape each shoulder by hand, a delicate process that guarantees the ideal cut. The salting is done using a traditional, centuries-old method, avoiding modern mechanical processes to give each piece the perfect amount of salt.
The curing takes place with natural air in Cortegana’s drying rooms, where time and open windows do all the work. The master ham-maker monitors each piece, determining the exact moment they should go into underground cellars, where the curing exceeds 12 months.
