Our shoulders come from Iberian pigs raised in dehesas, fed with acorns and natural pastures or selected feeds. Due to their smaller size, shoulder curing is shorter than ham curing (approximately 18 to 30 months), resulting in a more intense flavor and a greater marbling of fat in the slice.
