Iberian field-fed ham green tag, made in Cortegana

Ham cured and produced for 24 months in the natural cellars of Cortegana registered in the Jabugo DOP. This Iberian field-fed ham comes from pigs raised in freedom in the Dehesas of the Sierra de Aracena and Picos de Aroche in Andalusia. Our green TAG Iberian field bait ham contains the flavors of a high quality product made by hand and pampered by master ham makers during its curing and maturation period.

To certify the quality and traceability of a Cebo de Campo Iberian ham it is awarded the green seal or tag, and to do this, it must comply according to the "Ibérico Quality Standard" the following conditions:

  1. That the hams come from 50% Iberian breed pigs.
  2. That they have been fed in the pasture a part of their life with the resources of the countryside, complementing this diet with feed.
  3. That hams cannot weigh less than 7 Kg
  4. The hams must be cured for a minimum of 24 months.

1. What does "Cebo de Campo" mean in Iberian Ham?

The field-fed ham ham comes from 50% Iberian breed Iberian pigs and they have eaten feed and pastures from the oak and cork oak forest. Acorn-fed ham comes from pigs that can be from 50% to 100% Iberian breed and have been fed with acorns.
